Ingredients

Ice Cream Base
  • 3 cups coconut milk Brings creaminess and a hint of tropical flavor.
  • 3/4 cup maple syrup Can substitute with liquid allulose or a low-carb sweetener.
  • 1/2 cup cocoa powder Use unsweetened cocoa powder; can substitute with roasted carob powder.
  • 1/2 cup boiling water Helps to dissolve the cocoa powder.
  • 1 Tablespoon vanilla extract Adds aromatic flavor.

Method

Preparation
  1. Begin by placing the cocoa powder in a small heatproof bowl. Slowly pour in the boiling water and whisk until the mixture is free from lumps.
  2. Allow the mixture to cool for about 15 minutes.
Mixing
  1. In a blender, combine the cooled cocoa mixture, coconut milk, maple syrup, and vanilla extract. Puree until the mixture is completely smooth.
Churning
  1. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (about 20 to 25 minutes).
Freezing
  1. Transfer the ice cream to an airtight container and freeze for at least 2 hours to firm up.

Notes

For an even richer flavor, add a pinch of sea salt. Mix in crushed nuts or dairy-free chocolate chips during the last few minutes of churning. For no ice cream maker, pour mixture into a shallow dish and stir every 30 minutes while freezing.
