  • 3/4 cup all-purpose flour provides structure
  • 1/3 cup granulated sugar for sweetness
  • 1/3 cup light brown sugar adds a depth of flavor
  • 1 teaspoon ground cinnamon adds warmth
  • 1/4 teaspoon fine salt
  • 5 tablespoons melted unsalted butter for moisture
For the Cake Batter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup buttermilk for moisture
  • 2 large eggs provide structure
  • 4 tablespoons melted butter
  • 1/4 cup vegetable oil adds moisture
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon fine salt
  • 1 teaspoon baking soda for leavening
  • 1 cup mashed very ripe bananas about 3 bananas
For the Cream Cheese Filling
  • 8 oz cream cheese room temperature
  • 1/4 cup granulated sugar
  • 1 large egg for binding

Method

Preparation of Streusel
  1. In the bowl of a food processor, combine the toasted pecans, flour, granulated sugar, brown sugar, cinnamon, and salt. Pulse several times until well mixed and the pecans are broken down, about 5 to 6 pulses.
  2. Pour melted butter over the mixture and pulse again for another 3 to 4 times until well incorporated.
Preparing Cake Batter
  1. Preheat your oven to 350°F (180°C) and grease eight 4-inch springform or cake pans, lining the bottoms with parchment paper.
  2. In a large bowl, whisk together granulated sugar, brown sugar, buttermilk, eggs, melted butter, vegetable oil, vanilla extract, salt, and baking soda until blended.
  3. Add the mashed bananas, whisking again to combine. Gradually add the flour, mixing until just incorporated.
  4. Evenly divide the batter into prepared pans.
Preparing Cream Cheese Filling
  1. Sift cream cheese and granulated sugar in a stand mixer fitted with a paddle attachment. Beat on low speed until smooth and creamy.
  2. Add the egg and mix until completely incorporated.
Assembly and Baking
  1. Divide cream cheese filling among the cake batter in the pans, smoothing the tops as best as possible. Sprinkle streusel over each cake.
  2. Carefully place the pans in the oven and bake for about 25 to 35 minutes or until a skewer inserted into the center comes out clean.
  3. Once baked, transfer the pans to a wire rack and cool until barely warm or at room temperature before removing from pans.

Notes

For enhanced flavor, use overripe bananas and consider adding spices like nutmeg. This cake pairs wonderfully with whipped cream or vanilla ice cream. Freeze slices for longer storage.
