Method

Preparation
  1. Remove the stems and seeds from the dried ancho and guajillo chiles.
  2. In a medium-sized pot, add the beef stock and bring it to a boil.
  3. Once boiling, add the chiles, turn off the heat, cover the pot, and let sit for 15-20 minutes to rehydrate the peppers.
Blend the Sauce
  1. Transfer the chiles to a high-powered blender or food processor.
  2. Add the chopped onion, garlic, crushed tomatoes, apple cider vinegar, bay leaves, Mexican oregano, thyme, cumin, cinnamon, smoked paprika, and allspice.
  3. Blend until smooth and thick, adding more beef stock or water if a thinner consistency is desired.
Sear the Beef
  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a Dutch oven over medium-high heat, heat the olive oil.
  3. Add the chopped beef chunks, seasoned with salt, black pepper, and garlic powder.
  4. Sear on each side for 3-4 minutes or until golden brown. Remove the seared meat and place it on a plate lined with paper towels.
Cook the Aromatics
  1. In the same pot, add the diced onion and sauté until fragrant and translucent, about 1-2 minutes.
  2. Add the prepared chili paste and stir well, letting it cook for an additional 1-2 minutes.
Combine and Simmer
  1. Pour in the beef stock and water, stirring to combine.
  2. Return the seared beef to the pot and mix everything well.
  3. Reduce the heat to low and let it simmer briefly.
Braise the Beef
  1. Carefully transfer the Dutch oven to the preheated oven.
  2. Let it cook for about 2 1/2 hours until the beef is fork-tender and shreds easily.
Shred the Meat
  1. Remove the pot from the oven.
  2. Begin shredding the beef with forks until it’s fully pulled apart.
  3. Retain a cup of the cooking liquid to use as a dipping sauce.
Prepare the Tacos
  1. In a medium skillet over medium heat, add one tablespoon of olive oil.
  2. Using a paper towel, evenly spread it across the skillet surface.
  3. Dip the top of a tortilla in the reserve dipping sauce and carefully place it in the heated skillet.
  4. Fry for a few seconds, then top with shredded beef, diced onion, chopped cilantro, and shredded cheese.
  5. Fold the tortilla in half and let it cook until golden and the cheese melts.
  6. Carefully flip it to achieve a nice char. Repeat until all the tacos are prepared.
Serve
  1. Plate the tacos with a side of the dipping sauce and fresh Pico de Gallo.
  2. Enjoy the delightful combination of flavors!

Notes

Ensure that your tortillas are fresh and organic for the best flavor. Experiment with additional toppings like avocado or pickled onions for extra flavor. For spicier tacos, increase the amount of chipotle peppers or add freshly diced jalapeño. Make a big batch during the weekend and store leftovers for busy weekdays.
