Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash the russet potatoes thoroughly under running water, then dry them. Poke several holes with a fork.
- Rub each potato with olive oil and place on the prepared baking sheet.
Bake the Potatoes
- Bake the potatoes for 45 minutes to 1 hour, until tender in the center.
Prepare the Filling
- In a mixing bowl, combine shredded chicken, buffalo sauce, salt, pepper, and plain yogurt.
- Stir until well combined and set aside.
Stuffing the Potatoes
- Once baked, slice each potato down the center, about ¾ of the way, being careful not to cut through.
- Gently mash the insides with a fork.
- Stuff each potato with the buffalo chicken mixture.
- Top with shredded colby jack cheese and return to the oven.
Bake Once More
- Bake for an additional 3 to 5 minutes, until the cheese is melted.
Final Touches
- Remove from the oven, cool slightly, and garnish with green onions and ranch dressing if desired.
- Serve warm and enjoy.
Notes
For a thicker filling, add more yogurt or cream cheese. Experiment with different cheeses and add jalapeños for extra spice. These potatoes are great with a side salad or coleslaw.
