Method
Preparation
- Preheat your oven to 325°F and boil a large pot of water (around 4 quarts) for the water bath.
- Line the bottom of your springform pan with parchment paper and lightly grease the sides with nonstick cooking spray.
- For the crust, pulse the Graham crackers in a food processor until finely ground. Mix in the melted butter and sugar.
- Press the mixture firmly into the bottom of the prepared pan and bake for 10 minutes. Allow it to cool completely on a wire rack.
- Prepare a waterproof layer for the cheesecake by placing aluminum foil in a '+' shape under the springform pan and folding it up the sides.
Making the filling
- In the bowl of an electric mixer fitted with a paddle attachment, beat the cream cheese on medium speed until light and fluffy for about 4 minutes.
- Mix in the granulated sugar, cinnamon, ginger, nutmeg, and salt for another 4 minutes.
- Add the sour cream, lemon zest, and vanilla. Beat until just combined.
- Gradually add the eggs and yolk one at a time, ensuring minimal mixing.
- Pour the creamy filling over the cooled crust and tap the pan to release trapped air bubbles.
Baking
- Place the springform pan in a large roasting pan and pour boiling water until it reaches halfway up the sides of the pan.
- Bake the cheesecake for 75-90 minutes, until the edges are firm but the center is slightly wobbly.
- Allow the cheesecake to cool in the oven with the door cracked open for one hour before removing it.
- After cooling on the rack for 2-3 hours, cover with plastic wrap in the springform pan and refrigerate overnight.
Making the apple topping
- Whisk the cornstarch with lemon juice and set aside.
- Melt butter in a skillet over medium heat and add the apple filling ingredients. Cook for 5 minutes while stirring constantly.
- Reduce the heat and cook until the apples are tender, about 3-5 more minutes. Stir in vanilla and let cool slightly.
- Spoon the apple topping over the chilled cheesecake and drizzle generously with caramel sauce.
Serving
- Pair your cheesecake with whipped cream or ice cream after drizzling with caramel.
- Using a hot knife for clean slices is recommended.
Notes
Use room temperature cream cheese and eggs for easier mixing. Ensure thorough mixing but avoid overbeating to prevent cracks.
