Method
Preparation
- Spray your lollipop mold generously with nonstick cooking spray.
- Insert lollipop sticks into the molds and set aside.
Cooking
- In a medium saucepan, combine the granulated sugar, corn syrup, and water.
- Heat over medium-high until the sugar completely dissolves, stirring occasionally.
- Stop stirring and brush down the sides of the pan with a wet pastry brush.
- Bring the mixture to a boil and let it boil until it reaches a temperature of 300°F / 150°C.
- Remove the saucepan from heat and stir in the green apple flavoring and gel food coloring until blended.
Molding
- Carefully pour the hot sugar mixture into your prepared lollipop molds.
- Allow the lollipops to set completely for about 15 minutes.
- Pop them out of the molds and place them on a tray lined with parchment.
Caramel Coating
- In a microwave-safe bowl, place the unwrapped Kraft caramels and microwave.
- Stir every 15-20 seconds until completely melted and smooth.
- Dip each lollipop into the melted caramel, allowing excess to drip off.
- Allow the coated lollipops to rest until the caramel sets, about 10 minutes.
Storage
- Once set, individually wrap each lollipop in cello bags and store in an airtight container.
- Keep at room temperature for up to one month.
Notes
Use a candy thermometer for precision in candy-making. Experiment with different flavors and add decorations if desired.
