Ingredients

For the beef mixture
  • 1 lb lean ground beef Opt for lean beef to keep your dish flavorful yet lighter.
  • ¼ teaspoon salt A pinch to enhance the flavors.
  • ¼ teaspoon pepper Adds just the right amount of warmth.
  • 1 teaspoon onion powder Brings a subtle yet impactful onion flavor.
  • 1 teaspoon granulated garlic For that aromatic touch that elevates the dish.
  • 2 tablespoons Worcestershire sauce Adds depth and richness to the meat mixture.
  • 1 tablespoon ketchup A touch of sweetness and moisture.
  • 1 tablespoon mustard Provides a tangy contrast.
  • 2 tablespoons grated Parmesan cheese For creaminess and a touch of umami.
  • 1 8-ounce can tomato sauce Juicy and rich, tying everything together.
  • 1.5 cups cooked brown rice A healthy and hearty base.
  • 1.5 cups shredded cheddar cheese The star ingredient to create that gooey melt.
  • 1 cup beef broth or stock Essential for moisture and flavor during baking.
For the peppers
  • 5 medium bell peppers Choose colors that entice you the most.

Method

Preparation
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Prepare the bell peppers by cutting off the tops and removing the seeds and membranes. Set the cleaned peppers aside.
Cooking
  1. Heat a large skillet over medium-high heat. Brown the lean ground beef for about 5-7 minutes until it’s nearly done but still slightly pink.
  2. Season the beef with salt, pepper, Worcestershire sauce, ketchup, mustard, onion powder, granulated garlic, and Parmesan cheese. Continue cooking until thoroughly browned and no longer pink, about 2-3 minutes.
  3. In a large mixing bowl, combine the beef mixture with ¾ cup of shredded cheddar cheese, cooked brown rice, and tomato sauce. Stir well until all ingredients meld beautifully.
  4. Gently stuff each bell pepper with the beef mixture, packing it in snugly and topping each pepper with the remaining cheese.
  5. Place the stuffed peppers in a casserole dish and pour the beef broth into the bottom of the dish.
  6. Cover the dish tightly with foil and bake for 40-50 minutes, or until the peppers are tender and hot all the way through.
Serving
  1. Serve hot and enjoy this hearty, comforting meal!

Notes

For added flavor, consider adding chopped fresh herbs like parsley or cilantro into the beef mixture. You can also tweak the recipe using ground turkey for a lighter option or using quinoa instead of rice for a gluten-free meal.
