Ingredients

Main Ingredients
  • 40 ounces Zucchini (large, sliced 1/4 inch thick) These juicy, vibrant green zucchinis are the star of the show, adding freshness and texture.
  • 1 teaspoon Salt This essential seasoning enhances the natural flavors of the vegetables.
  • 2 tablespoons Butter Adds a rich, buttery flavor to the sautéed onions and garlic.
  • 5 ounces Onion (diced) Aromatic and sweet, these onions provide depth to the dish.
  • 2 cloves Garlic (minced) Offers a fragrant and savory punch that pairs beautifully with the zucchini.
  • ½ cup Heavy Cream Creamy and indulgent, it creates a luscious sauce.
  • 6 ounces Gruyere Cheese (grated and divided) This cheese brings a nutty flavor and gooey texture that makes every bite delightful.
  • 4 ounces Parmesan Cheese (grated and divided) Adds a salty and tangy kick, perfectly complementing the Gruyere.

Method

Preparation
  1. Preheat your oven to 450 degrees F.
  2. Prepare the zucchini by slicing it into 1/4-inch thick rounds. Sprinkle salt on both sides and let them sit for 30 minutes, flipping halfway through.
Cooking
  1. In a baking dish, layer the salted zucchini slices upright in rows until the dish is filled.
  2. In a large skillet, melt the butter over medium heat. Once melted, add the diced onion and sauté for 2-3 minutes until softened.
  3. Add the minced garlic to the skillet and cook for an additional 2 minutes, stirring frequently.
  4. Pour in the heavy cream and stir until it begins to bubble gently.
  5. Add the cheeses: Mix in 2 ounces of Parmesan and 4 ounces of Gruyere to the bubbling cream, stirring until melted and smooth.
  6. Pour the cheese sauce evenly over the arranged zucchini in the baking dish.
  7. Cover the casserole dish with foil and bake for 15 minutes.
  8. Remove the foil, sprinkle the remaining Gruyere and Parmesan on top, and return to the oven for an additional 5 minutes, until golden.
  9. Let it cool slightly before serving.

Notes

For extra flavor, consider adding herbs like thyme or rosemary to the cheese sauce. For a crispy topping, sprinkle some breadcrumbs before the final bake. Store leftovers in an airtight container for up to 3 days.
