Ingredients

Main Ingredients
  • 2 large navel oranges Bursts with sweet juiciness
  • 2 cups water To create the perfect balance
  • 4 cups fresh cranberries Bright and tart for a zesty kick
  • 2 small limes For the aromatic zest and juice
  • 1 cup apple juice Sweet and fruity to complement the cranberries
  • 2 2/3 - 3 cups granulated sugar To add a satisfying sweetness

Method

Preparation
  1. Wash the oranges thoroughly and peel just the outermost layer to avoid the bitter white pith. Slice the peels into thin strips, no longer than 1 inch, and place in a maslin pan.
  2. Remove the white pith from the oranges, discard it, cut the oranges in half, and squeeze the juice into the maslin pan.
  3. Tie the squeezed orange halves into a muslin cloth and place them in the pan.
Cooking
  1. Add 2 cups of water into the maslin pan. Bring to a boil and reduce to a simmer for about 30 minutes, stirring occasionally.
  2. Wash the cranberries and add them to the pan along with 1 cup of apple juice. Bring to a boil and cook for about 10 minutes.
  3. Stir in the zest and juice from the limes, followed by the sugar. Bring to a rolling boil until the setting point of 220°F (104.5°C) is reached.
  4. Once the setting point is reached, remove from heat and let sit for a few minutes. Remove the muslin bag and stir the jam.
  5. Transfer into warm, sterilized jars and seal immediately.

Notes

Use fresh ingredients for best flavor. If you don't have a thermometer, test the setting point by putting a spoonful of jam on a cold plate and running your finger through it.
