Preparation
- Preheat the oven to 180 degrees Celsius.
- Season the chicken thighs generously with salt and pepper. If using paprika, mix it in. Heat olive oil in a large pan, and sear the chicken for 5-7 minutes on each side until golden brown.
- Add butter to the pan. Toss in the onion and leeks, sautéing for about 3-4 minutes until soft and translucent.
- Incorporate minced garlic and thyme, sauté for an additional minute to meld the flavors.
- Add sliced mushrooms and cook on medium-high heat until they release moisture.
- Pour in chicken stock and fresh cream, stir, and return seared chicken, ensuring it is submerged in the sauce. Allow to reach a simmer.
- Cover with foil and bake in the oven for about 20 minutes or until the chicken is cooked through.
- Remove from the oven, squeeze lemon juice over the chicken, and sprinkle parmesan if using.
- Garnish with chopped parsley and serve hot, ideally with mashed potatoes or a fresh green salad.
Notes
For extra flavor, marinate chicken thighs with salt, pepper, and thyme the night before. Other vegetables like spinach or peas can be added for variety. Use rotisserie chicken for a quicker option.
