Preparation
- Add the cashews to a large glass dish and pour enough hot water over them to cover completely. Let them soak for 30 minutes.
- Preheat the oven to 350°F (175°C) and grease a baking dish or oven-safe skillet.
Blending
- After soaking, drain the cashews and transfer them to a high-powered blender or food processor.
- Add almond milk, buffalo sauce, light mayo, dairy-free ranch dressing, nutritional yeast, vinegar or lemon juice, and garlic powder.
- Blend on high until smooth. If too thick, add more almond milk as needed.
- Taste and adjust flavors with more buffalo sauce, vinegar, or ranch dressing if desired.
Final Assembly
- Pour the blended mixture into a bowl and fold in the cooked chicken until evenly mixed.
- Spread the dip into the prepared baking dish and bake for around 20 minutes, or until heated through and slightly bubbly.
- Optionally, swirl additional ranch dressing on top and sprinkle with chopped green onions before serving.
- Serve hot with veggie sticks or chips for dipping.
Notes
For extra flavor, consider adding diced jalapeños or smoked paprika when blending. Experiment with different types of buffalo sauce to find your perfect heat level. Substitute chicken with shredded jackfruit for a vegetarian option.
