Preparation
- Line a muffin pan with paper liners.
- Melt 1 tablespoon of coconut oil or dairy-free butter in a nonstick skillet over medium heat.
- Add unsweetened shredded coconut and a pinch of salt to the melted oil. Toast until golden brown then remove from heat and let cool.
- Melt dark chocolate chips with 1 teaspoon of coconut oil in a heatproof bowl until smooth.
- Spoon melted chocolate into each muffin cup to coat the bottom and sides. Refrigerate for about 10 minutes to set.
- In a bowl, mix pistachio butter, tahini, maple syrup, and toasted coconut until well combined. Adjust sweetness with extra maple syrup if needed.
- Spoon about 2 tablespoons of the pistachio mixture into each chocolate cup.
- Cover each filling with the remaining melted chocolate.
- Drizzle melted white chocolate on top and sprinkle with crushed pistachios.
- Refrigerate for roughly 1 hour or until the chocolate is set.
Notes
Use high-quality dark chocolate for best flavor. Toast coconut carefully to avoid burning. For variations, substitute pistachio butter with almond or cashew butter.
