Ingredients

Custard Base
  • 4 cups whole milk A rich base for a luscious custard.
  • 4 tablespoons corn starch Acts as a thickening agent.
  • 4 large egg yolks Adds richness and velvety texture.
  • 1 cup sugar Adjust based on taste preferences.
  • 1/2 teaspoon salt Balances sweetness.
  • 4 teaspoons vanilla extract Provides aromatic warmth.
Trifle Layers
  • 16 slices lemon pound cake Should be slightly crispy on the edges.
  • 1/2 cup cream sherry Adjust the amount based on preference.
  • 30 oz raspberry jam Brings color and tart flavor.
Whipped Topping
  • 1 1/2 cups heavy cream Whipped for a light and sweet topping.

Method

Preparation
  1. Start by placing the vanilla extract in a large bowl. Set a fine mesh strainer over the bowl.
  2. In a large saucepan, combine the whole milk, corn starch, egg yolks, sugar, and salt. Whisk until thoroughly mixed.
  3. Over medium heat, bring the mixture to a boil while whisking constantly.
  4. Taste and adjust sugar or salt as needed before it gets too hot.
  5. Once it bubbles, reduce heat and cook for an additional 30-45 seconds while whisking vigorously. Remove from heat and strain the custard into the bowl with vanilla.
Layering
  1. Cut rectangles of lemon pound cake about 1/2 inch thick and fit them in the bottom of a 9'x13' glass baking dish.
  2. Drizzle the cream sherry evenly over the pound cake.
  3. Spread a layer of raspberry jam over the pound cake.
  4. Add another layer of pound cake, drizzle with more sherry, and cover with another layer of jam.
  5. Carefully pour the custard over the trifle, filling any gaps.
  6. Cover the custard with roughly 1/2 inch of whipped cream made by whipping the heavy cream with sugar, salt, and vanilla until soft peaks form.
Chilling
  1. Cover the trifle with plastic wrap and chill in the refrigerator for several hours or overnight.
  2. Once chilled, serve in generous slices, optionally topping each slice with a maraschino cherry.

Notes

Taste as you go to adjust sweetness. Use chilled mixing bowl and beaters when whipping cream for best texture. Consider alternatives for pound cake.
