Preparation
- Preheat your oven to 350 degrees F.
- In a large mixing bowl, add the eggs, granulated sugar, dark brown sugar, vanilla extract, olive oil, and pumpkin puree. Using a whisk, mix until the ingredients are well combined and the mixture is smooth.
- Gradually fold in the gluten free all-purpose flour, baking powder, baking soda, salt, pumpkin pie spice, ground cinnamon, and ground ginger. Mix gently until everything is just combined to avoid overmixing.
- Line each mold of a cupcake tray with cupcake liners. Use a 2-tablespoon cookie scoop to distribute the batter into the liners, filling them almost to the top.
Baking
- Bake the cupcakes for 20-23 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cupcakes from the oven and allow them to cool completely on a wire rack.
Frosting Preparation
- In a mixing bowl, combine the softened butter and cream cheese. Blend until creamy and smooth.
- Add 1.5 cups of powdered sugar along with 1 tablespoon of vanilla extract. Mix this combination using an electric hand mixer until well blended.
- Gradually add the remaining 1.5 cups of powdered sugar, mixing again until the frosting reaches your desired consistency. If you want it thicker, slowly add an additional 1/4 cup of powdered sugar, but avoid exceeding 4 cups for optimal taste and texture.
Assembly
- Once the cupcakes are cool, transfer the frosting into a piping bag. Pipe the frosting onto each cupcake generously.
- For a festive touch, top each cupcake with a mellowcreme pumpkin candy.
Notes
To elevate your gluten-free cupcakes, consider adding chopped nuts or chocolate chips to the batter for added texture. If you're in the mood for extra sweetness, sprinkle some cinnamon or nutmeg over the frosting before serving. Also, for an even more intense pumpkin flavor, you can roast fresh pumpkin and purée it instead of using canned puree – it adds a fantastic depth to your cupcakes.
