Method
Preparation
- In a bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until combined into a pliable dough.
- Gently fold in the chocolate chips until well-distributed.
Forming the Bark
- Lay parchment paper on a cutting board or plate, then transfer the cookie dough mixture onto the parchment.
- Press the dough down to flatten it into a layer about 1/2-inch thick.
Chocolate Topping
- In a small bowl, melt the additional chocolate chips with coconut oil in the microwave in 30-second intervals, stirring in between until glossy.
- Pour the melted chocolate over the pressed cookie dough and spread evenly with a spatula.
- If desired, sprinkle flaky sea salt over the top.
Setting
- Place the bark in the freezer for about 10 minutes to set.
- Once firm, remove from the freezer and chop into large chunks.
Notes
For added texture, consider incorporating your favorite nuts or dried fruits. Ensure chocolate melts completely and using quality chocolate enhances the flavor. Store in an airtight container for up to a week or freeze for up to three months.
