Ingredients

Filling Ingredients
  • 1/2 cup refried beans Creamy and smooth, these beans contribute a rich texture and flavor while boosting protein.
  • 3/4 cup Greek yogurt This tangy addition lends a delightful creaminess and enhances the dish with a healthy twist.
  • 1 Tbsp taco seasoning Aromatic and spicy, this seasoning blend adds a kick and depth to the filling.
  • 3 cups shredded chicken Juicy and tender, shredded chicken brings plenty of protein and savory flavor to these enchiladas.
  • 1.5 cups shredded Mexican cheese (divided) Melty and gooey, this cheese adds indulgence and richness.
  • 10 oz can red enchilada sauce This vibrant sauce ties all the flavors together with its zesty, rich taste.

Method

Preparation
  1. Preheat your oven to 375 degrees F. Spray a 9x13-inch baking dish with nonstick cooking spray and set it aside.
  2. In a medium bowl, combine the Greek yogurt, refried beans, and taco seasoning. Mix well to combine these smooth, creamy ingredients. Fold in the shredded chicken and 1/2 cup of the shredded cheese until well incorporated.
Assembling
  1. Lay out your flour tortillas on a flat surface. Evenly scoop the chicken mixture onto each tortilla, approximately 1/3 cup for each.
  2. Carefully roll each tortilla tightly, then place them seam-side down in the prepared baking dish.
Baking
  1. Pour the red enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining 1 cup of cheese on top for an extra cheesy finish.
  2. Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  3. Once baked, remove the dish from the oven and top with fresh cilantro before serving.

Notes

To enhance flavor and texture, consider adding sautéed bell peppers or onions to the filling. For added heat, include sliced jalapeños or a dash of hot sauce in the enchilada sauce. For a lower calorie option, use low-fat Greek yogurt and cheese.
