Ingredients

For the Marinade
  • 1 tbsp oil (avocado oil is preferred) Provides a rich, buttery flavor.
  • 1 tbsp sesame oil Adds depth and nuttiness.
  • 2 cloves garlic Peeled and minced for a punchy kick.
  • 1 tsp minced ginger For a hint of warmth and spice.
  • 3 tbsp dark soy sauce Rich and flavorful for marinating.
  • 3 tbsp honey Sweet and sticky, perfect for glazing.
For the Skewers
  • 2 pieces chicken breasts (approx 350g/12.5 oz) Chopped into bite-sized pieces for tenderness.
  • 1 piece red bell pepper Chopped into large, juicy chunks.
  • 1 piece onion Peeled and sliced into squares for sweetness.
  • 1 tbsp sesame seeds For a crunchy finish.
  • 1 small bunch coriander/cilantro Roughly torn for freshness.

Method

Preparation
  1. In a small bowl, mix together the avocado oil, sesame oil, minced garlic, minced ginger, dark soy sauce, and honey to create the marinade.
  2. Place the chicken pieces into a bowl and pour three-quarters of the marinade over them. Ensure every piece is well-coated, cover, and chill in the fridge for at least one hour or up to a full day.
  3. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  4. Preheat your BBQ or griddle until very hot to get beautifully charred skewers.
Assembling and Cooking
  1. Thread a piece of marinated chicken onto a skewer, followed by a chunk of red pepper, another piece of chicken, and a slice of onion. Repeat until all ingredients are used. Discard any leftover marinade.
  2. Grill the skewers on your BBQ or griddle for 8-10 minutes, turning them 3-4 times. Brush with the reserved marinade halfway through.
  3. Check for doneness by slicing open the largest piece of chicken to ensure it’s cooked through without pink.
Serving
  1. Just before serving, sprinkle the skewers with sesame seeds and coriander for added flavor and color. Serve with a side salad or rice.

Notes

Marinate longer for deeper flavors, and feel free to use various vegetables. Adjust spices for desired heat. Serve with a simple dipping sauce.
