  • 1 can (15 ounce) mandarin oranges, undrained Sweet, juicy segments that add vibrancy and flavor.
  • 1 box (3.4 ounce) instant vanilla pudding Enriches the cake with a creamy texture.
  • 2 cans (8 ounce) crushed pineapple, undrained Adds a tropical depth and moisture to the cake.
  • 1 container (8 ounce) Cool Whip, thawed Delivers a light, airy frosting.

Method

Preparation
  1. In a large mixing bowl, combine all the cake ingredients listed above. Use a spatula to blend everything until well incorporated.
  2. Spray three 9-inch round cake pans with cooking spray to prevent sticking.
  3. Divide the batter evenly among the three pans, filling each with about 2 cups of the mixture.
  4. Bake in a preheated oven at 350 degrees Fahrenheit for 20 to 25 minutes.
  5. Once baked, remove the pans from the oven and let them cool for a few minutes. Carefully turn the cakes out onto a wire rack to cool completely.
  6. In a separate bowl, combine all the frosting ingredients (the Cool Whip and any additional toppings you prefer) and mix thoroughly.
  7. After the layers are completely cool, spread a layer of frosting between each cake layer, stacking them one on top of the other.
  8. Finish with a generous layer of frosting on top, and decorate with reserved mandarin orange segments.

Notes

Letting the cake layers cool completely is essential for a stable structure. For extra flair, consider adding shredded coconut or chopped nuts between layers. Experiment with flavored extracts in your frosting for added zest.
