Ingredients

Marinade Ingredients
  • 2 pounds chicken thighs (boneless and skinless) These cuts are rich and juicy, making them perfect for grilling.
  • ¼ cup honey This natural sweetener adds a delightful glaze, enhancing the chicken's flavor.
  • 2 tablespoons olive oil (extra virgin) Rich in healthy fats, this oil helps tenderize the chicken while adding a subtle fruity aroma.
  • 2 tablespoons dijon mustard This introduces a tangy kick, balancing the sweetness of the honey beautifully.
  • 2 tablespoons soy sauce or coconut aminos Brings savory depth that complements the other flavors.
  • 1 teaspoon garlic powder A dash of this brings a warm, aromatic essence to the marinade.
  • 1 teaspoon salt Essential for enhancing the overall flavors.
  • 1 teaspoon black pepper Adds just the right amount of heat and fragrance.
  • ½ teaspoon paprika For a hint of smokiness and vibrant color.

Method

Preparation
  1. Combine all the marinade ingredients in a gallon-sized Ziploc bag, squeezing out any excess air before sealing.
  2. Lay the bag flat and ensure the marinade coats the chicken thighs evenly.
  3. Marinate for a minimum of 1 hour, preferably overnight to enhance flavors.
  4. Preheat the grill to medium-high heat.
  5. Lightly oil the grill grates to prevent sticking.
Grilling
  1. Place the marinated chicken thighs on the grill. Grill for 4-6 minutes on one side.
  2. Flip the chicken and grill for another 4-6 minutes, or until fully cooked.

Notes

For enhanced flavor, let the chicken marinate overnight. Using a meat thermometer, ensure the chicken reaches an internal temperature of 165°F (75°C). Experimenting with herbs like rosemary or thyme can add depth.
