Ingredients

Base Ingredients
  • 1 tablespoon olive oil This aromatic oil forms the base of the dish, lending a rich, fruity essence.
  • 5 cloves garlic (minced) Fresh garlic creates an enticing fragrance, elevating the overall flavor profile.
  • 1/2 cup sun-dried tomatoes (chopped) These tangy morsels add a burst of brightness and depth.
  • 1/2 teaspoon oregano Dried oregano introduces an earthy layer, reminiscent of Italian gardens.
  • 1/2 teaspoon red chili flakes A hint of heat that enlivens the dish without overwhelming it.
  • 1 teaspoon salt Essential for amplifying the inherent flavors of your ingredients.
  • 1/4 teaspoon ground black pepper Adds warmth and a touch of spice.
  • 2 15-ounce cans chickpeas (drained and rinsed) The heart of the dish, offering creaminess and protein.
  • 1 cup vegetable broth A savory liquid that melds all the flavors together.
  • 1 tablespoon tomato paste Provides a concentrated burst of tomato goodness.
  • 1 cup vegan cream This silky component makes the dish indulgently creamy.
  • 2 cups baby spinach (sliced) Fresh spinach adds vibrant color and nutrients.
  • 4-5 leaves fresh basil (chopped) Fresh basil introduces a burst of herbal freshness.
  • 1/2 cup grated vegan parmesan cheese (optional) For those who want a cheesy touch, this adds a delightful finishing flavor.

Method

Cooking
  1. In a large sauté pan over low-medium heat, warm the olive oil.
  2. Add the minced garlic to the pan and cook for 1-2 minutes, stirring frequently.
  3. Stir in the sun-dried tomatoes, oregano, red chili flakes, salt, and black pepper. Cook this mixture for another minute.
  4. Add the chickpeas, vegetable broth, tomato paste, vegan cream, and sliced spinach to the pan. Stir together well and bring to a gentle simmer.
  5. Continue cooking for about 5 minutes, stirring occasionally, until the spinach wilts.
  6. Remove the pan from heat and gently stir in the fresh basil and grated vegan parmesan.
  7. Serve your Marry Me Chickpeas immediately, paired with crusty bread, rice, or pasta.

Notes

Consider sautéing the garlic slightly longer for a richer flavor; feel free to swap baby spinach with other greens. Adding nutritional yeast can enhance the cheesy flavor if you skip the vegan parmesan. For a heartier meal, include cooked quinoa or farro in the dish. Store leftovers in an airtight container for up to 4 days.
