  • 3 cups spinach or arugula for an earthy flavor Either can be used based on your preference.
  • 1/2 piece cantaloupe or other melon, chopped into bite-sized chunks Can substitute with papaya.
  • 1 piece ripe avocado, chopped into creamy bites Choose a ripe avocado for best flavor.
  • 1/2 cup chopped mango (about 1 small mango) Adds sweetness and juiciness.
  • Lime or lemon slices to garnish for a zesty finish Use fresh slices.
Dressing Ingredients

  • 1/3 cup white vinegar For an acidic balance.
  • 1/2 teaspoon dry mustard For a hint of spice.
  • 1/2 cup chopped onion Adds aromatic flavor.
  • 1/2 cup olive oil or avocado oil For richness.
  • 2 tablespoons fresh melon seeds Can substitute with papaya seeds.
  • 1 teaspoon honey (optional) Omit for a vegan version.
  • 2 teaspoons sea salt To enhance flavors.

Method

Preparation
  1. Combine all the salad ingredients in a large salad bowl: chopped red lettuce, spinach or arugula, diced melon, avocado, and mango. Toss gently to combine and set aside.
  2. Gather all the dressing ingredients and place them in a blender.
  3. Blend on high for about a minute or until the dressing is creamy and smooth.
Serving
  1. Drizzle the dressing over the salad ingredients in the bowl. Adjust the amount to your taste, as not all dressing needs to be used.
  2. Any leftover dressing can be refrigerated for up to three days.

Notes

For the freshest flavors, try to use ripe fruits to maximize sweetness and juiciness. Consider adding nuts or seeds for crunch.
