Method

Preparation
  1. Add the heavy whipping cream to a mixer bowl. Beat it at low speed for about 2 minutes, then increase to medium-high. Whip until it starts to thicken and soft peaks form.
  2. Gradually add the powdered sugar and continue whipping until stiff peaks form. Reserve 2 cups of this sweetened whipped cream for the filling and the rest for layering.
  3. In the same mixer bowl, add softened cream cheese. Beat at medium speed for about 1 1/2 to 2 minutes until it’s whipped and creamy.
  4. Add the blueberry pie filling, lemon zest, and lemon juice to the cream cheese. Beat until everything is well combined.
  5. Gently fold in the 2 cups of reserved sweetened whipped cream into the blueberry mixture until thoroughly combined.
Assembly
  1. Fill pastry bags with the blueberry filling and another with the remaining sweetened whipped cream. Layer into 5-ounce dessert glasses or small bowls in the order: blueberry filling, whipped cream, fresh blueberries, and repeat the layers.
  2. Top with additional blueberries and a slice of lemon if desired. Chill the cheesecake in the refrigerator for at least 4 hours or overnight for the best flavor and texture.

Notes

Make this dessert ahead of time for the flavors to develop overnight. Consider adding a splash of vanilla extract to the cream cheese mixture for extra depth. Feel free to replace the blueberry filling with raspberry or strawberry for a different twist.
