Ingredients

Main Ingredients
  • 1 pound ground beef or ground turkey Choose your preference for a lean, juicy protein.
  • 1 15 ounce can black beans, rinsed and drained Adds a creamy texture and is rich in fiber.
  • 1 10 ounce can enchilada sauce A must-have for zesty flavor. Can use homemade.
  • 5 pieces corn tortillas (cut in half and then sliced into thin strips) Will soak up the sauce and add chewiness.
  • 1 cup shredded cheddar cheese For a gooey topping that melts beautifully.

Method

Cooking
  1. Heat a large skillet over medium heat. Add the ground beef or turkey and brown it for about 5-7 minutes, breaking it apart as it cooks.
  2. Drain off any excess grease to keep the dish from becoming greasy.
  3. Add the rinsed black beans and enchilada sauce to the skillet, stirring thoroughly. Cover and reduce heat to low, letting it simmer for about 10 minutes.
  4. Introduce the sliced tortilla strips, stirring gently to coat them in the sauce.
  5. Top with shredded cheddar cheese, cover, and simmer for an additional 5-10 minutes, or until the cheese is fully melted and bubbly.

Notes

For extra flavor, season the meat with taco seasoning. Add jalapeños or red pepper flakes for heat. You can also use different cheeses like pepper jack.
