  • 4 cloves garlic, minced Infuses the dish with flavor.
  • 2.5 cups chicken broth
  • 2.5 cups heavy cream Base for the creamy sauce.
  • 1 lb uncooked penne pasta Provides a lovely chew.
  • 2 cups baby spinach Adds nutrition and color.
  • 2 cups Parmesan cheese For rich flavor.
  • 2 cups mozzarella cheese Delivers a rich, gooey finish.
  • salt and pepper, to taste
  • freshly chopped parsley, for garnish Adds freshness.

Method

Preparation
  1. In a large stockpot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a boil.
  4. Once boiling, add the uncooked penne pasta. Reduce the heat to a simmer, cover, and cook for 15-20 minutes until al dente and the sauce thickens.
  5. Turn off the heat and gently fold in the shredded rotisserie chicken, baby spinach, and 1 ½ cups of Parmesan cheese. Season with salt and pepper as needed.
  6. Grease an 11×7 inch or 9×13 inch baking dish and pour half of the pasta mixture into the dish, sprinkling with 1 cup of mozzarella.
  7. Layer the remaining pasta on top, followed by an additional cup of mozzarella and ½ cup of Parmesan cheese.
  8. Preheat your broiler. Broil for 10-15 minutes until the cheese is golden brown and bubbling.
  9. Remove from the oven and sprinkle with freshly chopped parsley. Serve hot.

Notes

Consider adding a sprinkle of nutmeg to the cream for extra flavor. You can substitute the pasta with whole grain or use half-and-half instead of heavy cream for a lighter dish.
