Ingredients

Base Ingredients
  • 1 cup creamy salted peanut butter Forms the base of our cookies, offering a nutty flavor.
  • 1/2 cup powdered erythritol or 6 tablespoons confectioners swerve sweetener Low-sugar sweetener option.
  • 1/4 cup almond flour or 2 tablespoons coconut flour Adds nuttiness and moisture to the cookies.
  • 1 large egg Essential for binding ingredients together.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Form Cookies
  1. In a mixing bowl, combine all your ingredients, stirring until well-mixed to form a thick dough.
  2. Using a scoop or tablespoon, form 1 to 2 tablespoons of dough into balls about 1 inch in diameter and place onto the prepared baking sheet, spacing them about 2 inches apart.
  3. Flatten each ball with a fork to create a criss-cross pattern.
Bake & Cool
  1. Bake in the preheated oven for 12 to 15 minutes, until the edges are golden brown.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For extra flavor, consider adding chocolate chips or chopped nuts. Letting the dough rest in the fridge for about 30 minutes can improve texture and yield a thicker cookie. For a softer cookie, reduce baking time slightly.
