Preparation
- Line two baking sheets with waxed paper or use aluminum foil sprayed with cooking spray.
- Butter the sides of a 3-quart saucepan.
- In the pot, mix together light brown sugar, granulated sugar, kosher salt, dark corn syrup, and whole milk.
Cooking
- Place the pot over medium heat, stirring frequently until the sugar fully dissolves.
- Once dissolved, bring the mixture to a boil and attach a candy thermometer to the pot.
- Cook until it reaches the softball stage (about 235°F), stirring occasionally.
- Remove from heat and let cool for about 10 minutes.
- Stir in vanilla extract and beat the mixture by hand for about 2 minutes.
- Fold in the toasted pecans and continue beating until the mixture loses its gloss.
- Drop spoonfuls of the praline mixture onto the lined baking sheets.
- Monitor timing to ensure dropping is done just as they lose gloss but before they get too hard.
Notes
For best results, use a candy thermometer for accurate temperature control. Store pralines in an airtight container for up to two weeks or freeze for up to three months. Experiment with spices or different nuts for variations.
