  • 4-6 tablespoons butter, melted Adds richness and helps bind the crust.
For the cheesecake filling
  • 28 ounces cream cheese, room temperature The main ingredient providing smooth texture.
  • 1/4 cup powdered sugar Sweetens the cheesecake.
  • 3 ounces lemon gelatin Adds tartness.
  • 1/4 ounce unflavored gelatin Helps set the cheesecake.
  • 1 2/3 cups boiling water For dissolving the gelatins.
For the strawberry topping
  • 3 ounces strawberry gelatin Adds fruity flavor.
  • 1 1/2 cups boiling water For dissolving the strawberry gelatin.
  • 1 pint fresh strawberries, sliced Garnishes the cheesecake.
  • 1 sprig fresh mint Optional garnish.

Method

Preparation
  1. In a bowl, combine the lemon and unflavored gelatin with 1 2/3 cups of boiling water. Stir until completely dissolved and cool to room temperature.
  2. Line the bottom and sides of a 9-inch springform pan with parchment paper, then lightly grease the sides.
  3. Crush the digestive biscuits into fine crumbs and mix with 4 tablespoons of melted butter to resemble wet sand. If too dry, add remaining butter.
  4. Press the crumb mixture evenly into the bottom of the springform pan and refrigerate.
  5. Beat the cream cheese in a large bowl until smooth. Gradually add powdered sugar and mix well. Incorporate the cooled lemon gelatin until blended.
  6. Pour the cream cheese mixture over the chilled crust and return to the refrigerator for at least 2 hours.
  7. In another bowl, dissolve the strawberry gelatin in 1 1/2 cups of boiling water and let cool until slightly thickened.
  8. Once the cheesecake has set, pour a thin layer of the cooled strawberry gelatin over the top and arrange sliced strawberries on it.
  9. Pour the rest of the strawberry gelatin over the strawberries and refrigerate again until firm, about 2 hours.
  10. Carefully remove the side of the springform pan, slice, and serve garnished with fresh mint.

Notes

Beat the cream cheese well before adding other ingredients for a creamier filling. Can substitute strawberries with blueberries or raspberries. Add a splash of lemon juice for enhanced flavor.
