Ingredients

Main Ingredients
  • 1 fillet cooked salmon (about 4 ounces / 115 grams) – flaked The salmon brings a juicy richness that pairs beautifully with the eggs.
  • 6 large eggs These eggs become light and fluffy, encapsulating the flavors of the other ingredients.
  • 1/4 cup half and half The addition of half and half makes your scramble exceptionally creamy and luscious.
  • 1/4 small red onion – diced The red onion adds a slightly sweet and aromatic crunch.
  • Everything seasoning – for topping Adds a delightful mix of flavors.
  • Chives – finely chopped, for garnish Adds a pop of color and mild oniony zest.
  • 1 tablespoon butter – for cooking Provides a rich base for cooking.

Method

Preparation
  1. In a large bowl, whisk the eggs together until fully combined. Add the half and half, whisking until smooth and creamy.
  2. Heat a medium-sized non-stick frying pan over medium-low heat and add the butter.
  3. Once the butter is melted, add the diced red onions and sauté for about 4 minutes until softened.
Cooking
  1. Gently pour the egg mixture into the pan, allowing it to sit and cook undisturbed. Once the edges begin to set, gently push the eggs around and fold in the flaked salmon.
  2. Keep gently moving the mixture until the eggs are just about set but still slightly runny. Remove from heat just before fully cooked.
  3. Sprinkle Everything but the Bagel seasoning and chopped chives over the top before serving.
Serving
  1. Serve immediately and enjoy the blend of flavors!

Notes

For extra fluffiness, separate egg whites and yolks and whip the whites until soft peaks form before folding them back in. Use fresh, high-quality salmon for better flavor. Experiment with your preferred herbs or spices for personalization.
