Preparation
- Preheat your oven to 400 degrees F (200 degrees C) and grease a baking pan with cooking spray.
- Rinse the salmon fillets under cold water and pat dry with paper towels.
- Place the salmon skin side down in the prepared pan, drizzle with olive oil, and distribute it evenly.
- Sprinkle salt and pepper over the salmon to enhance its natural flavors.
- Slice the mozzarella into 1/4 inch rounds and place two slices on top of each salmon fillet.
- Rinse the grape tomatoes, pat dry, and slice if necessary. Distribute the tomatoes evenly over the mozzarella.
- Sprinkle the tomatoes with garlic powder and additional pepper.
Baking
- Bake the salmon in the preheated oven for 20 minutes, or until it flakes easily with a fork.
- While the salmon is baking, rinse the basil leaves, pat dry, and slice into ribbons.
- Once baked, remove from the oven and slide a spatula between the skin and fish to remove the skin, if necessary.
- Top each piece with fresh basil ribbons and drizzle with balsamic glaze before serving.
Storage
- Store any leftovers in a sealed container in the refrigerator for up to four days.
Notes
