Ingredients
Method
Make the Cookie Dough
- Cream the softened butter with an electric mixer on medium-high speed in a large bowl.
- Add the granulated and light brown sugars, mixing until well combined.
- Add the vanilla extract and eggs, mixing just until everything is blended.
- Carefully incorporate the dry ingredients into the wet mixture, stirring until a dough forms.
- Chill the dough for 30 minutes.
Make the Apple Filling
- Rinse and peel the apples, then dice them into bite-sized chunks.
- Place diced apples in a medium pan over medium-high heat along with the cubed butter, apple cider, brown sugar, and spices.
- Cook for 15 to 18 minutes until the apples reach your desired tenderness.
- Transfer the apple mixture to a medium bowl and allow it to cool.
Make the Salted Caramel Sauce
- Follow an easy recipe for salted caramel sauce and let it cool at room temperature for about 20 minutes.
Scoop & Chill the Dough
- Scoop the dough into balls weighing about 65 grams using a large cookie scoop.
- Chill in the fridge for at least four hours or two hours in the freezer.
Make the Crumble
- Preheat your oven to 350°F (175°C).
- Melt the butter and stir in the remaining crumble ingredients to create a crumbly mixture.
- Spread this mixture onto a parchment-lined baking sheet and bake for about 12-14 minutes until deep golden brown.
Bake the Cookies
- Preheat the oven to 365°F (185°C) and line cookie sheets with parchment paper.
- Stir together sugar and spices for coating the cookies.
- Roll each dough ball in this cinnamon-sugar mixture and place on the sheets.
- Bake for 10-12 minutes, allowing them to rest before creating an indent in the centers.
Assemble Cookies
- Spoon the cooled apple pie filling into the centers of each cookie.
- Sprinkle the crumble on top and drizzle with salted caramel sauce.
Notes
For an extra touch, sprinkle cinnamon on top of the caramel drizzle. Store leftovers in an airtight container in the fridge for 4-5 days.
