Method
Preparation
- Remove the brisket from its packaging, discarding the liquid, and separate the seasoning packet.
- Place the corned beef brisket in a large (6 qt.) slow cooker with the fat side facing up.
- Sprinkle the seasoning packet generously over the meat.
Cooking
- Pour in enough beef broth around the brisket until it reaches just about level with the top of the meat.
- Cover the slow cooker and set it to cook on high for 3 hours.
- After 3 hours, carefully uncover and arrange the red potatoes and carrot chunks around the brisket.
- Replace the cover and continue cooking on high for an additional 2 hours.
- Once the cooking time is complete, arrange the cabbage wedges on top of the corned beef and cook for an additional hour.
- After a total cooking time of approximately 6 hours, carefully remove the vegetables from the slow cooker and keep them warm.
- Slice the brisket against the grain for the best texture and serve alongside the potatoes, carrots, and cabbage.
Notes
Choose quality corned beef for flavor. Do not rush the cooking time; slow cooking is essential for tender results. Adjust broth seasoning to personal preference. Store leftovers properly.
