Method
Preparation
- Start by roughly crushing the Golden Oreos. You can place them in a sealed ziplock bag and gently roll a rolling pin over them.
- Pour the crushed cookies into a bowl, and mix in the strawberry Jello powder and melted butter. Stir well until combined.
- Spread this mixture onto a plate and let it dry slightly.
- Preheat your oven to 350°F (175°C).
Mixing
- In a large mixing bowl, cream together the softened butter, white sugar, and light brown sugar until light and fluffy.
- Add the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Stir in the strawberry extract and whisk in the food coloring.
Combining Dry Ingredients
- In another bowl, whisk together all-purpose flour, baking soda, and salt.
- With the mixer on low speed, slowly add the flour mixture to the butter-sugar mixture until just combined.
Forming Cookies
- Scoop out tablespoon-sized portions of dough, roll into balls, and coat them in the crushed cookie mixture.
- Place on a prepared baking sheet, spacing them a few inches apart.
Baking
- Bake the cookies for 8 minutes. Remove from the oven and sprinkle extra cookie mixture on top, then return to the oven for an additional 4 minutes.
- Allow cookies to cool completely before transferring to a wire rack.
Notes
For extra flavor, add a pinch of lemon zest. Store cookies in an airtight container for up to one week.
