Preparation
- Add a bit of oil to a small frying pan over medium heat and sauté diced red and green bell peppers for 3 minutes until softened.
- In a medium bowl, mix the sautéed peppers, drained tuna, and cream cheese until well combined.
- In another bowl, crack the eggs and whisk until fully blended.
Cooking the Omelette
- Heat oil in an 8-inch nonstick frying pan over medium-high heat; then pour half the beaten eggs into the pan.
- After 30 seconds, gently disturb the cooked edges with a spatula to allow uncooked egg to flow in.
- Continue cooking until a thin layer of liquid egg remains on top, about another 30 seconds.
- Spoon half of the tuna mixture onto one half of the omelette and fold over to create a semi-circle.
- Cook for another minute to seal the edges, then flip to cook for an additional minute.
- Transfer the omelette to a plate; garnish with chopped chives, sea salt, and black pepper.
- Repeat the process with remaining ingredients for a second omelette.
Notes
Consider adding garlic or onion powder to the eggs for extra flavor. For a spicy kick, incorporate diced jalapeños. Adjust tuna and cream cheese amounts to taste. Store leftovers in an airtight container for up to 3 days. Reheat in the microwave or skillet. Variations include substituting tuna with salmon or adding spinach and feta.
