Method
Preparation
- Begin by greasing silicone molds with coconut oil or lining a pan with greased wax or parchment paper.
Cooking the Syrup
- In a heavy-bottomed pan, combine the sugar, ¾ cup of water, and citric acid. Bring to a gentle boil, then lower the heat.
- Heat until the mixture reaches approximately 260ºF without stirring continuously.
Preparing the Cornstarch Mixture
- Whisk together the cornstarch and ½ cup of water in a separate bowl until smooth.
Combining Mixtures
- Gradually drizzle the cornstarch mixture into the hot sugar syrup while stirring continuously until a gel-like consistency forms.
Thickening the Mixture
- Return the combined mixture to low heat, stirring constantly until it becomes transparent.
- Test for consistency by dipping a spoon into the mixture and placing it in ice water to gauge readiness.
Adding Flavor and Coloring
- Incorporate flavorings and colorings once the consistency is satisfactory, adjusting to taste.
Setting the Delight
- Pour the mixture into the prepared molds and spread evenly. Allow to cool for several hours until set.
Cutting and Dusting
- Once cooled, cut into small squares and dust generously with cornstarch to prevent sticking.
Notes
Flavor variations include substituting rose with orange blossom or lemon. Store in an airtight container; lasts up to 2 weeks.
