Main Ingredients
  • 2 cups frozen hashbrown potatoes Crisp-edged and golden.
  • 2 cups frozen fajita blend veggies (bell peppers and onions) Juicy and aromatic.
  • 2 cups sliced mushrooms Earthy and tender.
  • 16 oz black beans (1 can drained and rinsed) Creamy and protein-rich.
  • 8 oz extra firm tofu High in protein, mimics scrambled eggs.
Seasoning and Oils
  • 1 teaspoon onion powder Layering flavors.
  • 1 teaspoon garlic powder Essential for savory flavor.
  • 1 teaspoon salt To enhance flavors.
  • 2 tablespoons olive oil Adds richness.
  • ½ teaspoon smoked paprika Adds a smoky note.
  • 1 tablespoon nutritional yeast Adds a cheesy flavor.
  • 2 teaspoons oil For the tofu mix.
  • ½ teaspoon turmeric powder Adds vibrant color and earthiness.
Toppings
  • Vegan sour cream Balancing flavor.
  • Guacamole Provides a fresh contrast.
  • Salsa Adds spice.

Method

Preparation
  1. Begin by preparing the tofu. Cut the block in half, squeezing out excess water over the sink to avoid a soggy texture.
  2. Gently crumble the tofu into pieces that resemble scrambled eggs.
  3. Sprinkle the crumbled tofu with garlic powder, onion powder, nutritional yeast, salt, oil, and turmeric. Gently fold to mix.
Baking
  1. Preheat your oven to 380 degrees Fahrenheit. Line a large baking sheet with parchment paper.
  2. On the prepared baking sheet, create distinct rows for each component: black beans, tofu scramble, mushrooms, fajita veggies, and hash browns.
  3. Drizzle each row with olive oil and mix lightly to ensure even cooking.
  4. Sprinkle each row with salt, pepper, garlic powder, onion powder, and smoked paprika.
  5. Bake in the preheated oven for 30 minutes, stirring at the 15-minute mark.
Serving
  1. Once finished, remove from the oven and assemble the ingredients into a bowl or wrap them in a burrito.
  2. Top with vegan sour cream, guacamole, and salsa.

Notes

For extra flavor, marinate the tofu in soy sauce before crumbling. Fresh herbs like cilantro enhance the dish. For spice, add jalapeños or hot sauce.
