Method

Fry the Shallots and Garlic
  1. Start by placing the shallots and garlic in a cold medium skillet.
  2. Pour in enough olive oil to fully cover them.
  3. Turn the heat to medium-high for one minute, then reduce it to low.
  4. Gently fry the ingredients, until they become lightly golden, approximately 12-15 minutes.
  5. Transfer the shallots and garlic to a paper towel to drain excess oil and cool.
  6. Chop them roughly for a crunchy topping.
Whip the Butter
  1. In a mixing bowl, combine the room temperature butter, heavy cream, lemon zest, and the reserved garlic shallot oil.
  2. Use a hand mixer to whip the mixture for 1-2 minutes to combine.
  3. Scrape down the sides of the bowl and increase the mixer speed to high.
  4. Continue whipping for an additional 4-5 minutes until the mixture is fluffy and light.
Assemble and Serve
  1. Layer a spoonful of the whipped butter in a serving dish, and sprinkle some of the crispy shallots and garlic on top.
  2. Repeat this layering process until all the butter is used.
  3. Finish with a sprinkle of remaining shallots and garlic, a drizzle of honey, and a pinch of flaky salt.
  4. Serve warm alongside crusty bread.

Notes

For added flavor, infuse the olive oil with fresh herbs while frying. Store leftovers in an airtight container in the refrigerator for up to a week.
