  • 1.5 cups black beans (or 1 can drained) High in protein and fiber.
  • 1.5 cups corn (or 1 can drained) Adds sweetness.
  • 1.5 cups spinach (packed, approximately 2-3 oz) Fresh and healthy.

  • 1 teaspoon cumin Adds warmth.
  • 0.5 teaspoon kosher salt Enhances flavors.
  • 0.125 teaspoon ground black pepper For heat.

Method

Preparation
  1. Heat the olive oil in a sauté pan over medium heat. Add the minced garlic and diced onion, cooking for about 1-2 minutes until fragrant and translucent.
  2. Chop the fresh spinach and toss it into the pan. Sauté for another 1-2 minutes until wilted.
  3. Add the black beans and corn to the pan. Stir and cook together for 5-6 minutes, allowing flavors to meld.
  4. Reduce the heat to medium-low. Sprinkle in paprika, cumin, salt, and pepper. Stir and add the shredded cheese on top, allowing it to melt.
  5. Dampen a paper towel and place one on top of each tortilla. Microwave for about 20 seconds to soften.
  6. Scoop 2-3 large portions of the filling into the center of a tortilla.
  7. Fold each side of the tortilla over the filling and then roll it up tightly.
  8. Cut the burrito in half and serve warm with hot sauce, lime juice, or salsa verde.
