Preparation
- Start by rinsing your small glass jars with hot water and allowing them to dry completely.
- Finely grate the Parmesan cheese so it blends seamlessly into the pesto.
- Rinse the wild garlic leaves thoroughly and dry them using a salad spinner.
- Using a knife, roughly chop the Bärlauch.
Blending
- In a mixer, combine the chopped Bärlauch with walnuts and olive oil. Blend until you achieve a creamy but slightly coarse consistency.
- Incorporate the grated Parmesan into the mixture, then season with salt, pepper, lemon zest, and a splash of lemon juice. Blend just enough for everything to mix well.
Storage
- Carefully transfer the pesto into your prepared jars, keeping the edges clean.
- Pour a thin layer of oil over the surface of the pesto to seal it. Secure the lids tightly and store in a cool place.
Notes
Choose fresh Bärlauch for best flavor and experiment with oil types for different flavor profiles.
