  • 50 g Walnüsse Creamy nuts providing texture.
  • 50 g Parmesan Savory cheese that enhances flavor.
  • 150 ml mild olive oil Can substitute with canola, sunflower, or walnut oil.
  • ½ tsp sea salt Enhances flavors.
  • ½ tsp black pepper Season to taste.
  • ½ tsp lemon zest, grated Adds citrus notes.
  • 1 dash lemon juice Enhances acidity.

Method

Preparation
  1. Start by rinsing your small glass jars with hot water and allowing them to dry completely.
  2. Finely grate the Parmesan cheese so it blends seamlessly into the pesto.
  3. Rinse the wild garlic leaves thoroughly and dry them using a salad spinner.
  4. Using a knife, roughly chop the Bärlauch.
Blending
  1. In a mixer, combine the chopped Bärlauch with walnuts and olive oil. Blend until you achieve a creamy but slightly coarse consistency.
  2. Incorporate the grated Parmesan into the mixture, then season with salt, pepper, lemon zest, and a splash of lemon juice. Blend just enough for everything to mix well.
Storage
  1. Carefully transfer the pesto into your prepared jars, keeping the edges clean.
  2. Pour a thin layer of oil over the surface of the pesto to seal it. Secure the lids tightly and store in a cool place.

Notes

Choose fresh Bärlauch for best flavor and experiment with oil types for different flavor profiles.
