Ingredients

For the Salsa
  • 1 tablespoon minced jalapeño peppers (from 1 pepper, seeded)
  • 2 scallions (light and dark green parts, thinly sliced)
  • 1 small clove of garlic (minced)
  • 2 tablespoons fresh cilantro leaves (a sprinkle of freshness)
  • ¼ teaspoon salt
  • 1 tablespoon lime juice (from 1 lime) (for a zesty kick)
  • 2 small ripe tomatoes (about ¾ pound, cored and diced) (juicy and sweet)
For the Beef Mixture
  • 1 tablespoon vegetable oil
  • 1 small yellow onion (finely chopped) (aromatic and sweet)
  • 1 pound lean ground beef (90 to 93%) (rich and hearty)
  • 2 tablespoons chili powder (for depth and warmth)
  • ½ teaspoon dried oregano (adds a touch of earthiness)
  • 1 teaspoon ground cumin (to enhance the flavor profile)
  • ¼ teaspoon cayenne pepper (optional, for a spicy kick)
  • ¼ teaspoon salt
  • 1 tablespoon tomato paste (for added richness)
For Assembling
  • 1 (10-oz) bag tortilla chips (crispy and golden)
  • 1 pound shredded Mexican blend cheese (4 cups, creamy and melty)
  • 2 jalapeño peppers (thinly sliced into rounds, optional for heat)
  • Lime wedges (for serving, providing a fresh squeeze)
  • Sour cream (optional, for a creamy contrast)
  • Homemade or store-bought guacamole (for an irresistible dip)

Method

Preparation
  1. In a small bowl, combine the minced jalapeño pepper, scallions, minced garlic, fresh cilantro leaves, salt, lime juice, and diced tomatoes. Stir to mix everything together and set aside; let the flavors meld.
Cook the Beef Mixture
  1. Heat the vegetable oil in a medium skillet over medium heat. Add the finely chopped onion and cook until softened, about 3 minutes.
  2. Stir in the minced garlic and cook for an additional minute, taking care not to brown it.
  3. Add the ground beef to the skillet along with chili powder, oregano, cumin, cayenne pepper, salt, and tomato paste.
  4. Increase the heat to medium-high and cook, breaking up the meat with a wooden spoon, until no longer pink, about 4 to 5 minutes.
Bake the Nachos
  1. Preheat your oven to 400°F (205°C) and set an oven rack in the middle position. Prepare a rimmed baking sheet by lining it with parchment paper.
  2. Spread half of the tortilla chips in an even layer on the baking sheet. Spoon half of the beef mixture over the chips, evenly distributing it across.
  3. Sprinkle 2 cups of the shredded cheese and half of the jalapeño slices over this layer. Repeat with the remaining chips, beef mixture, cheese, and jalapeño slices.
  4. Place the baking sheet in the oven and bake for about 7 to 10 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove the nachos from the oven and serve directly on the baking sheet or transfer to a platter. Offer lime wedges, sour cream, and guacamole on the side for dipping.

Notes

To store leftover Beef Nachos, keep the components separate and store in airtight containers in the fridge for up to three days. Reheat the beef in a skillet and assemble fresh nachos for a quick meal. For a twist on your nachos, consider using different toppings like pineapple or shredded BBQ chicken. You could also add black beans or corn for additional flavor and texture.
