Method
Preparation
- Place the biscoff or speculoos cookies in a food processor and blend them into fine crumbs.
- Add the cookie butter to the crumbs and blend until a thick paste forms.
- Scoop out about 1 ½ teaspoons of dough and form them into round balls. Place them on a plate or baking pan lined with parchment paper.
- Freeze the truffle balls for about 30 minutes to firm them up.
Coating
- Remove the truffle balls from the freezer and roll them into smooth balls again.
- Chop the white chocolate into small pieces. Melt three-quarters of it using the double boiler method or microwave.
- Once melted, stir in the remaining quarter of the chocolate until smooth.
- Dip each truffle into the melted white chocolate, ensuring they're well coated. Allow excess chocolate to drip off.
- Place the coated truffles onto the prepared plate or pan and repeat until all are dipped.
- For added flair, drizzle extra melted chocolate over the tops or sprinkle crushed cookie crumbs on top.
Notes
Ensure your cookie butter is at room temperature for easier mixing. For a flavor variation, add a pinch of sea salt over the chocolate coating.
