Ingredients

Main Ingredients
  • 24 cookies biscoff or speculoos cookies These cookies provide a delightful crunch and aromatic spiciness.
  • 1 cup cookie butter This luscious spread is thick and creamy, bringing heavenly texture and flavor.
  • 8 ounces white chocolate Rich and creamy, this chocolate melts smoothly for a decadent coating.

Method

Preparation
  1. Place the biscoff or speculoos cookies in a food processor and blend them into fine crumbs.
  2. Add the cookie butter to the crumbs and blend until a thick paste forms.
  3. Scoop out about 1 ½ teaspoons of dough and form them into round balls. Place them on a plate or baking pan lined with parchment paper.
  4. Freeze the truffle balls for about 30 minutes to firm them up.
Coating
  1. Remove the truffle balls from the freezer and roll them into smooth balls again.
  2. Chop the white chocolate into small pieces. Melt three-quarters of it using the double boiler method or microwave.
  3. Once melted, stir in the remaining quarter of the chocolate until smooth.
  4. Dip each truffle into the melted white chocolate, ensuring they're well coated. Allow excess chocolate to drip off.
  5. Place the coated truffles onto the prepared plate or pan and repeat until all are dipped.
  6. For added flair, drizzle extra melted chocolate over the tops or sprinkle crushed cookie crumbs on top.

Notes

Ensure your cookie butter is at room temperature for easier mixing. For a flavor variation, add a pinch of sea salt over the chocolate coating.
