Ingredients

Cake
  • 1 box Angel Food Cake Mix For a light and airy cake
Pudding and Cream Mixture
  • 2 boxes Instant Cheesecake Pudding Mix To add a rich texture
  • 3 cups Half and Half or Whole Milk For mixing with pudding
  • 1 teaspoon Pure Vanilla Extract For flavor enhancement
  • 2 packages Neufchatel Cream Cheese (8 ounces each) Softened for mixing
  • 2 containers Cool Whip (8 ounces each) Thawed, alternatively use fresh whipped cream
Filling
  • 2 cans Blueberry Pie Filling (21 ounces each) For fruity layers
  • 1 sprig Fresh Mint (optional) For garnishing

Method

Preparation
  1. Bake the Angel Food Cake according to package instructions. Let cool completely.
  2. Slice the cooled cake into 1-inch thick slices and cube into bite-size pieces. Divide into thirds.
Prepare the Pudding
  1. In a bowl, mix the pudding mix with 3 cups of half and half or whole milk and the vanilla extract using an electric mixer for 2-3 minutes until thickened but pourable.
  2. Transfer the pudding into another bowl and set aside.
Cream the Cheese
  1. In the same mixing bowl, cream the softened cream cheese with one container of whipped topping until smooth.
Combine Mixtures
  1. Gently add the pudding mixture into the whipped cream cheese mixture and mix until smooth.
Assembly
  1. In a trifle bowl, layer 1/3 of the cake cubes, followed by 1/3 of the blueberry pie filling, then 1/2 of the whipped cheesecake mixture.
  2. Repeat layers, finishing with cake cubes and top layer of blueberry pie filling.
Chill and Serve
  1. Cover and chill the trifle for at least 4 hours, or overnight.
  2. Before serving, frost the top with remaining whipped topping and garnish with fresh mint.

Notes

For best results, use an electric mixer. This trifle can be prepared a day ahead of time for better flavor blending. For variations, consider substituting the blueberry pie filling with other fruit fillings or adding layers of chocolate pudding for a twist.
