Preparation
- Bake the Angel Food Cake according to package instructions. Let cool completely.
- Slice the cooled cake into 1-inch thick slices and cube into bite-size pieces. Divide into thirds.
Prepare the Pudding
- In a bowl, mix the pudding mix with 3 cups of half and half or whole milk and the vanilla extract using an electric mixer for 2-3 minutes until thickened but pourable.
- Transfer the pudding into another bowl and set aside.
Cream the Cheese
- In the same mixing bowl, cream the softened cream cheese with one container of whipped topping until smooth.
Combine Mixtures
- Gently add the pudding mixture into the whipped cream cheese mixture and mix until smooth.
Assembly
- In a trifle bowl, layer 1/3 of the cake cubes, followed by 1/3 of the blueberry pie filling, then 1/2 of the whipped cheesecake mixture.
- Repeat layers, finishing with cake cubes and top layer of blueberry pie filling.
Chill and Serve
- Cover and chill the trifle for at least 4 hours, or overnight.
- Before serving, frost the top with remaining whipped topping and garnish with fresh mint.
Notes
For best results, use an electric mixer. This trifle can be prepared a day ahead of time for better flavor blending. For variations, consider substituting the blueberry pie filling with other fruit fillings or adding layers of chocolate pudding for a twist.
