  • 4.5 cups 4 ½ cups granulated sugar Adds sweetness to balance the tartness.
  • 1 box 1 box (1.75 oz) Sure-Jell less sugar pectin Helps the jam set while allowing for a more natural taste.
  • 0.5 teaspoon ½ tsp unsalted butter Helps to reduce foaming, resulting in a clearer jam.
  • 1 teaspoon 1 tsp lemon zest Adds a refreshing brightness to the flavor.

Method

Preparation
  1. Gently crush the fresh blueberries with a masher until broken down but still retaining some texture.
  2. Measure out your sugar into a separate bowl for easy access.
Cooking
  1. In a heavy-bottom kettle, combine crushed blueberries, Sure-Jell, butter, and lemon zest. Heat over medium heat, stirring until combined.
  2. Allow the mixture to reach a rolling boil for 8-12 minutes.

  4. Boil for exactly 1 minute to ensure the sugar is fully dissolved.
Canning
  1. Pour the jam into sterilized jars, leaving about ¼ inch of headspace.
  2. Wipe the rims of the jars and seal with lids and rings, tightening them to fingertip tightness.
  3. Lower the filled jars into a boiling water bath and cook for about 10 minutes.
  4. Remove jars and let them cool for at least 12 hours before checking the seals.

Notes

For a little extra zing, consider adding a pinch of cinnamon or a splash of vanilla extract. Store jars in a cool, dark place and refrigerate opened jars for up to three weeks.
