Preparation
- Roast the bone marrow at 425°F for 15-20 minutes until bubbling and pulling away from the bone.
- Remove the marrow from the bones and transfer it to a bowl alongside the rendered fat.
- Add the butter to a food processor with the marrow, chives, tamari, salt, pepper, and honey. Process until smooth.
Assembly
- Poke a hole in a paper cup and pass a wick through it to serve your butter candle.
- Add the butter mixture to the cup, ensuring it stays around the wick. Place in the freezer for at least 15-20 minutes to set.
- Serve with toasted ciabatta. Toast until golden and crispy, then spread the rich butter generously.
Notes
To enhance the flavor, consider adding a pinch of smoked salt and experimenting with herbs like parsley or dill. Don’t rush the cooking time for the bone marrow; allow it to caramelize slightly for better flavor.
