Ingredients
Method
Preheat and Prepare
- Preheat your broiler and position the oven rack in the top position.
Make the Saucy Goodness
- In a small saucepan over medium heat, warm the vegetable oil.
- Add the minced ginger and cook for a few minutes until it softens; then stir in the minced garlic and cook for another minute.
- Add dry sherry, soy sauce, tomato paste, brown sugar, and water. Bring to a boil, then reduce the heat and let it simmer for 8 to 10 minutes until it thickens.
- Stir in sesame oil and butter until melted. Set aside to develop flavors.
Season the Steak
- Generously season the flat iron steak on both sides with kosher salt and freshly cracked black pepper.
- Place the steak on a broiler pan or a rack over a baking sheet.
Broil to Perfection
- Broil the steak for about 5 minutes per side for medium-rare.
- Remove and let it rest covered with foil for about 10 minutes.
Slice and Serve
- After resting, slice the steak thinly against the grain.
- Serve with the soy ginger sauce drizzled on top or on the side.
Notes
Resting the meat is essential to keep it moist. Alternative cuts include ribeye or sirloin. Store leftover sauce in an airtight container for up to a week.
