Method
Roasting Garlic
- Preheat your oven or air fryer to 400°F. Peel excess skin from the garlic and cut off about one-third of the top to expose the cloves.
- Drizzle olive oil over the exposed cloves, cover with the top, and wrap tightly in foil.
- Roast for 25-30 minutes or until cloves are golden brown. Allow to cool slightly and squeeze cloves out of their skins.
Preparing Potatoes
- Cut the potatoes into 2-3 inch chunks and place in a large pot. Cover with cold water and season with salt.
- Bring to a boil and cook until fork-tender, about 25-30 minutes.
Making Brown Butter
- Melt the cubed butter in a medium saucepan over medium heat, stirring continuously.
- Watch for the color changes to golden yellow, amber, and finally rich brown, then remove from heat.
Combining Ingredients
- Drain the cooked potatoes and return to the pot. Let sit on low heat for 1 minute to dry out.
- Add the roasted garlic, browned butter, salt, and pepper to the potatoes and mash to desired consistency.
- Incorporate cream cheese and hot milk, stirring gently. Adjust seasoning as needed.
Notes
For extra garlic flavor, use more than one head. A squeeze of lemon juice can brighten the dish. Consider mixing herbs like thyme or rosemary during boiling for added flavor. To store leftovers, refrigerate up to 3-5 days or freeze in a safe container.
