Ingredients

Main Ingredients
  • 1 head garlic Roasted for sweetness.
  • 2-2.5 lbs potatoes (Yukon Gold or Russet) Peeled or unpeeled for added nutrition.
  • 5 tbsp unsalted butter (cubed) This will be browned for flavor.
  • 3 tbsp cream cheese Adds creaminess and tang.
  • ½ cup hot milk For smooth consistency.
  • Salt and pepper to taste Essential seasonings.

Method

Roasting Garlic
  1. Preheat your oven or air fryer to 400°F. Peel excess skin from the garlic and cut off about one-third of the top to expose the cloves.
  2. Drizzle olive oil over the exposed cloves, cover with the top, and wrap tightly in foil.
  3. Roast for 25-30 minutes or until cloves are golden brown. Allow to cool slightly and squeeze cloves out of their skins.
Preparing Potatoes
  1. Cut the potatoes into 2-3 inch chunks and place in a large pot. Cover with cold water and season with salt.
  2. Bring to a boil and cook until fork-tender, about 25-30 minutes.
Making Brown Butter
  1. Melt the cubed butter in a medium saucepan over medium heat, stirring continuously.
  2. Watch for the color changes to golden yellow, amber, and finally rich brown, then remove from heat.
Combining Ingredients
  1. Drain the cooked potatoes and return to the pot. Let sit on low heat for 1 minute to dry out.
  2. Add the roasted garlic, browned butter, salt, and pepper to the potatoes and mash to desired consistency.
  3. Incorporate cream cheese and hot milk, stirring gently. Adjust seasoning as needed.

Notes

For extra garlic flavor, use more than one head. A squeeze of lemon juice can brighten the dish. Consider mixing herbs like thyme or rosemary during boiling for added flavor. To store leftovers, refrigerate up to 3-5 days or freeze in a safe container.
