  • 1 cup granulated sugar Perfectly sweet and gives that satisfying crunch.
  • 2 tbsp corn syrup Helps to achieve that smooth, sticky consistency.
  • 2 tbsp water Balances the mixture and prevents premature burning.

  • 1 1/2 cup finely chopped salted pecans Crispy and nutty, adding texture and flavor.

Method

Preparation
  1. Line a baking sheet with parchment paper and set it aside.
Cooking the Toffee
  1. In a medium saucepan, melt the salted butter over medium heat.
  2. Stir in the granulated sugar, corn syrup, water, and kosher salt, bringing the mixture to a gentle boil, stirring constantly.
  3. Continue cooking while stirring often until the mixture reaches 295°F on an instant-read thermometer.
  4. Stir in the baking soda and continue cooking until the mixture reaches 310°F.
Setting the Toffee
  1. Remove the saucepan from the heat and carefully pour the hot toffee mixture onto the prepared baking sheet.
  2. Spread it evenly using a spatula and allow it to cool completely.
Adding Chocolate and Pecans
  1. If the toffee surface appears oily, gently blot with a paper towel.
  2. Spread half of the tempered chocolate over one side of the toffee, followed by half of the chopped pecans. Allow to set for about 10 minutes.
Finishing Touches
  1. Carefully flip the toffee over and repeat the process with the remaining chocolate and pecans.
  2. Allow the toffee to sit for a few hours to let the chocolate harden.
  3. Break the toffee into pieces and store in an airtight container.

Notes

For best results, ensure the chocolate is properly tempered for a glossy finish. Use an instant-read thermometer for accurate temperature readings.
